By improving your ability to play piano by ear, one can learn how to recognize chord changes in a song and literally play the song in their mind, even before sitting down to the piano to play it.

Here is a perfect example of what I might do when hearing a song I'd like to learn:

Listen to the song all the way through.
Listen to what the bass is doing (the lowest notes of each chord).
Listen for different chord types.
Listen for familiar chord changes that have been played in other songs (you'll find that many songs repeat chord changes that you've played a dozen of times in other songs).
After discovering the basic chord patterns of the song, go to the piano and find what key the song is played in (you'll learn this technique as well), and attempt to play along with the song.
After playing along with the song, stop the music, and proceed to play the song by myself.
After playing the basic chord changes, I start the music again and listen for unique sounds that might require me to use different inversions and voicings (how a chord is played and arranged).
After choosing inversions/voicings for chords, learn other details of the song (fancy melodies, "bridges", repeats, dynamics, etc).

This is just an example of my personal song-learning process.
